This time a 25 litre brew length.  Should be ready for when my parents come down to visit in November.

Based on the recipe in Wheeler’s book, but with black malt and hops reduced as the numbers predicted by Beer Engine didn’t match the EBC and IBU of the recipe, and because my lovely wife prefers less bitter ales!

Comments:

This is a slightly different recipe to the last time I tried Landlord.  That time I didn’t have any black malt, so I used a mix of pale and medium DME to get the colour right (according to Beer Engine’s calculator).  This time it looked like Beer Engine was predicting something a little too dark and too bitter, so I reduced the amounts of Black Malt and the bittering hops.  I have no idea if the recipe or the software is more accurate, but since V thought the JCB was too bitter for her taste I decided to reduce the hops a bit anyway.

I really do need to find a sensible way of setting the immersion cooler at a variable height – as I type it’s balanced on a fridge wine bottle holder, which in turn is balanced on a up-turned bowl.  Hardly ideal, even if it does seem quite stable!

I’m also pitching 2 packets of Safale S-04 for this brew, as the pitching calculators and the packet would imply that 25 litres is a little more than 1 packet’s worth.  Not like it’s terribly expensive stuff, and it may help prevent some of the off-tastes I’ve had in previous brews, and help it drop down to 1.010, rather than the 1.014s I’ve been getting.  The Rigg finished at 1.010 with 1 packet in 10 litres.

Measured OG a little high, at 1.047 @ 24C = 1.048.

2010-10-19: Measured SG at 1.014 on Saturday, 1.013 yesterday, so I’ll give it a few more days. Increased the temperature from 18C to 20C.  Tasting very good at this stage, too.

It’s got colder the last week, so maybe a 60W bulb in the fridge should be replaced by a tube heater.

2010-10-23: Didn’t move much from last week, ended up about 1.012.  Racked into barrel yesterday (22nd), and bottled 10 today.  Very clear and quite tasty.

Comments:

8l boil in the normal pot. Medium DME added for whole boil. Light DME added with 15mins to go, same time as Irish Moss.

Used GW yeast rehydration technique – 4/5g of yeast.

After cooling, whirlpool & syphon to FV. Top up with cold water to 10l.
Fermented in 25l FV with airlock.

OG 1043

Worried about lack of activity (though there was foam and krausen) so gave it a rousing/aerating on 04 May 2010.
More foam again on 05 May, tested SG with hydrometer at 1016, so all is probably well. Returned sample to FV (everything had been StarSanned).
10l in a 25l bin seems to not move the airlock noticably!
Will now leave it until the weekend and test again then for gravity and bottle on Sun. Can’t decide whether to do a 2ry ferment – will depend on clarity!

16 x 500ml + 1 x 750ml, plus 30g sugar in 150ml water.
FG 1012
ABV 4%
Tasting good already-and looking clear when bottled!

First one I regarded as good enough to give to friends. Very nice indeed!
