Another Wheeler recipe, picked by Vicky as it’s now autumn and the recipe is described as being a ruby coloured beer. This isn’t exactly the Wheeler recipe, I’ve upped the malts to match my efficiency and to give more colour, and adjusted the hops for a 60 minute boil and with the alpha acid contents given on the packets.

Comments:
A bit frantic today, for some reason. I forgot to rehydrate the irish moss (well, it got 5 minutes), and also forgot to boil the water for rehydrating the yeast. All went well otherwise, and I ended up with 25 litres at 1.046, so spot on.
2011-10-11: 48 hours in, and down to 6.8Bx = 1.015, so the notty has gone quickly again!
2011-10-16: 1 week, at 6Bx = 1.010, so we’re probably about done. I wish I’d measured it yesterday as it would be handy if I could rack it off into a barrel today as I’d like the space for the FV of stout that I’m brewing today. I may move it into the house overnight and if it’s the same reading tomorrow then I’ll barrel it.
2011-10-19: I barrelled it during the brew on Sunday, filling 1 x 5 litre mini-keg and the rest in the pressure barrel. Today I bottled 12 from the barrel. A crafty 1/4 pint taster is rather nice. Quite a bitter start, but without huge hops aroma, with the malt coming through in the after-taste. I was a bit concerned with a sharpness I tasted when I barrelled it on Sunday, but that’s gone by now. It should mellow out to be a rather nice pint.
2011-11-06: Had a glass last night. It’s very hazy from the barrel still – I didn’t crash cool or fine it, which does appear to be necessary. The taste reminds me a bit of the Big Lamp and Burton Bridge I did early in the year.
