Let’s try this again! Correct recipe this time, and boiled using the vent described in my last post.

Trying Nottingham yeast with this one, but just the one sachet.
I ended up with around 20 litres of wort, so a little less than I aimed for, and an OG of 1.044, so a smidge higher. Into the fridge (which has been cleaned!) at 19C.
The FV is the same as the failed last batch, but it’s been soaked in VWP overnight, then rinsed out several times, then rinsed with a campden solution, then sprayed with StarSan. With luck, we should be infection free in this one.
2010-12-08: Dropped down to 1.010. Looking cloudy, but tasting good, if green. It’s had 10 days now, so I’ll rack it to a barrel in the next day or two.
2010-12-12: Bottled 10, the rest went in the barrel with 40g sugar in 200ml water to prime. Tastes good, but quite cloudy still – that’ll be the Nottingham. Should (from what I’ve read) drop clear as it conditions.
2010-12-24: Moved the barrel from the fridge (18C) to the garage (around freezing!). It’s clear already and tasty, so should be great in another week or so. Best brew so far!
2011-01-15: Tastes good, if a little sharp still. May need a little more conditioning.
